Quick Dinner Idea

As busy working mamas we are often HAUNTED by the age old question: What's for dinner??? I figured out some time ago that planning ahead is essential to taking some of the frustration out of deciding what in the WORLD am I gonna feed these people!? 😂😂

As I was meal planning a few weeks ago I decided on a simple, yet delicious KNOCK IT OUTTA THE PARK EVERY TIME recipe: Mississippi Pot Roast! Y'all...so good. Perfectly seasoned, melt in your mouth tender and the best part- ridiculously easy.

I put my roast in the crockpot with the other few ingredients and walked away chile...


8 hours later there was pure deliciousness and with minimal effort. This particular day, after a long day of seeing patients, driving across town to pick up the little one, rushing back home to start dinner before premarital counseling, we were still able to have a home-cooked meal and I didn't have to spend all afternoon in the kitchen. I got home at 5, washed my hands then peeled, chopped and boiled the potatoes while my honey put on a pot of frozen green beans. Listen...keep a stash of frozen veggies on hand, that will save you many a day. By 5:30 when it was time to start our session, the roast was warming, the green beans were done and the potatoes just needed to be mashed and seasoned. Super delicious comfort food just like that! Ingredients:

1 medium chuck roast

1 packet au jus mix

1 packet ranch dressing mix

Approximately 6 Pepperoncinis

1 stick salted butter
